Kohlrabi, Roasted Corn + Red Potato Chowder {Dairy Free}

Soup season is upon us and what a glorious time it is now that fall is here! This one pot vegetable packed chowder is sure to be a hit. Adapted from a recipe found on Pinterest, I was able to create a delicious and creamy soup without all the extra dairy. My homemade ghee made a great replacement for butter and coconut milk made the perfect sub for whole milk. Don’t be afraid of the kohlrabi as it makes for a beautiful and hearty addition to this dish. Bon appétit babes!

Kohlrabi, Roasted Corn + Red Potato Chowder

Ingredients
  • ▸ 2T ghee
  • ▸ 3 cloves garlic, minced
  • ▸ 1 sweet onion, diced
  • ▸ 2 celery stalks, diced
  • ▸ 1 carrot, diced
  • ▸ 1|4c flour
  • ▸ 4 cups organic vegetable broth
  • ▸ 1 can (full fat) coconut milk
  • ▸ 1 large kohlrabi
  • ▸ 2c red potatoes, diced
  • ▸ 1 cup roasted corn
  • ▸ 1T fresh chopped parsley
  • ▸ Himalayan pink salt and pepper to taste
Directions
  • Step 1 In a large stock pot melt ghee over medium high heat.
  • Step 2 Add in garlic, onions, celery and carrots.
  • Step 3 Cook until vegetables are tender, 5-7 minutes.
  • Step 4 Add in Kohlrabi, potatoes and parsley.
  • Step 5 Cook for another 5 minutes then add in flour.
  • Step 6 Combine thoroughly.
  • Step 7 Gradually stir in broth, mixing a little in at a time.
  • Step 8 Bring mixture to a boil then reduce to a simmer for 20 minutes.
  • Step 9 Add in coconut milk and continue to cook for another 5-10 minutes.
  • Step 10 Finish with more fresh parsley and a sprinkle of smoked paprika.
